Blackberry Jam, Syrup, and Cobbler!

We have been picking blackberries like crazy. We are making lots of jam. We had French toast the other day with fresh blackberry syrup…it was soooo good!

Here is a recipe for my favorite Blackberry Muffins. These are soooo good when warm.

Fallon’s Blackberry Muffins Recipe

INGREDIENTS
2 1/2 cups all purpose flour
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
1 cup sour cream
1 teaspoon milk
1 cup sugar
8 Tbsp melted butter (1 stick)
1 teaspoon vanilla
1 1/2 cups of fresh blackberries (we use 2 cups sometimes because we love them so much ;o) )

Preheat oven to 400°F. Grease a standard 12 muffin pan or line with paper muffin cups.

Mix together the flour, baking powder, baking soda, cinnamon and salt in a large bowl.

In a separate bowl, mix together eggs, sour cream, milk, sugar, butter and vanilla.

Add the wet mixture to the dry mixture and mix together just until the dry ingredients are moistened. Add the berries –fold them in gently so they don’t smash.

Fill muffin cups. Bake until a toothpick inserted into the middle comes out clean or around 17-20 minutes.

Cool on a rack.

Enjoy!

Reno

We went to Reno, NV. We had a lot of fun! We went to Scheel's, Cabela's, and to Dayton to visit a friend. We swam a lot, ate at buffets until we were stuffed, and played in the arcade for hours. In our room there was a flat screen tv in the bathroom. So I sat in the jacuzzi bath and watched cartoons.
